Well, if it makes you feel any better, many of the awful looking moments that people are warning you about were fixed for Blu-ray releases. This was a pretty standard practice for anime back in the days before streaming services became the behemoths they are today, when DVD and Blu-ray sales were a much bigger deal. Naruto, Bleach, One Piece, even Attack on Titan did / do this. When the new episodes of Seven Deadly Sins S3 (and, to a lesser extent, S4) were airing each week in Japan, people were rightfully shocked by how bad some of the visuals were, and even to this day, there are a lot of memes. Fortunately (in this case), because of how long it took Netflix to start streaming each new cour of Seven Deadly Sins, the version we got includes many of the Blu-ray fixes. I'm not gonna pretend that everything looks amazing, but people are definitely being harsher than they need to be. That being said, it's never a bad idea to lower expectations, even when you don't have to.

i think with s3 and 4, if you can get past the somewhat lackluster animation, the story is very nice

iirc season 3 starts with normal animation and then gets worse in the middle / end of the season. I actually enjoyed the start and middle of season 3 and then switched to reading the manga from there.
