This series has some of the best character development I think I've ever seen in any form of media. Another story I really like in terms of MC development and story progression is Danmachi which I think you would both really enjoy watching.

As others have said, you can now watch the OP for S2 part 1 as it's gonna change for the next part. Honestly, you could've watched that OP pretty much from the moment it was introduced as the only thing close to spoilers that it has is showing characters which were all shown by the time we met Nanahoshi in episode 9. However, I would highly recommend skipping the OP for part 2 until at least episode 23 as the next OP definitely has things that would be better that you didn't see.
