Yeah, the ending conversation between Mabel and Dipper on his apprenticeship with Ford does make Dipper's sacrifice of his future feel less one-sided. The fact that she was willing to let Dipper go, instead of just being 100% okay with his decision to go home with her, makes Mabel less selfish if they didn't include it at all.

I adore Mabel and Dipper's relationship. It is so sweet how much they love each other. They might be my favourite sibling duo in all of media. And i think the show is pretty clear that there is no right and wrong side in their relationship. They might take turns being the selfish one, but at the end they always have the other's back. Nearly everytime they learn a lesson over the course of the show, it is out of love for their sibling.
