It would be too cliche if he just completely “learned from his mistakes” and “became a good guy” after being captured. It’s a good character arc because it’s realistic and shows that the character is nuanced

Hating on Jamie is crazy😂 he’s actually a very well written and well liked character by most of the fan base. How did he go off the deep end? He said he would kill those kids just as a threat in order to save more lives overall. We don’t know if he meant it. He genuinely didn’t want the blackfish’s men to die for no reason. He even let brienne escape.

Also the dragon thing is not an inconsistency because it was never established in the show that dragons couldn't be harmed. The only time something related to this is brought up is when Qyburn shows Cersei that this scorpion ballistic weapon can in fact penetrate the skull of a dragon. So the dragons in the show and in the books are just not the same. And don't forget that it is also men who made the dragons go extinct in the first place with fucking poison of all things so it's not that unrealistic.

"Dracarys" is not a name, it's a command in High Valyrian for any dragon to attack with fire. Daenerys' dragons are Viserion (the gold one) and Rhaegal (the green one), named after her brothers Viserys and Rheagar, and the biggest, Drogon, the black one, named after Khal Drogo. It's all mentioned some episodes ago, but it's easy to forget, don't worry. And also, I think you missed Brienne asking Arya who taught her to fight so well and she responds "No one". Funny moment.
