also, the majin vegeta speech he gives Goku why he let Babidi control him. The dub definitely adds a lot of dialog and the original has many more parts where no one says anything and more pauses. I would definitely watch some of the dbz episodes subbed

What I will say is that Goku in the sub is very similar to Goku from the original Dragon Ball series when he was a kid. It is different from the dub a bit. I would watch the hope of the universe episode in sub and also the trunks special and also gohans ssj 2 transformation

I got used to the subbed voices from watching Super when it first aired. They still use 90% of the original japanese cast in every installment of the franchise. From DB to present. They're all around 70 or 80 at this point and still screaming their lungs out. My preference is dubbed, but I have crazy respect for the og cast. Like Masako Nozawa. She was 50 when she first voiced kid goku. She is 86 and still active. Also I'll say it now so I want have to bring it up in the future. Yes the modern animation is often filled with more color, but the trade off is detail. All attacks will look the same and movement tends to feel notably more stiff. Oversimplified styles make things look interesting as well as dull. Like a flat lolly pop vs a blow pop. One gives you more when you bite into it.
