As long as they are within the sell by date they should be fine. Freshly laid eggs keep for well over a month if not two. Another trick for hard boiled eggs is to put cold eggs in the water after it boils. Starting them in cold water also tends to make shells stick. That said, no parrot cares about how pretty an egg is or even if it's peeled. They usually love eggs served any way they can get them 😊

Are they still healthy to eat when they’re old? I am vegan and I don’t eat eggs so this made me curious

Try using eggs that are a few weeks old for hard boiled eggs. The shell tends to stick on very fresh eggs.
