About the hairstyle part: I think he got embarrassed because the question was "What kind of hairstyle do you like (IN GENERAL) ?". But then he answered by saying that any hairstyle would look good ON YAMADA, making it obvious that he was thinking exclusively about her while answering. And when she pointed it out, he got embarrassed. That's my interpretation, but I might be wrong

The skit about the heights of Yamada and her short friend was to show the difference between their heights while standing and while sitting. The difference in their heights was huge while standing, but much smaller while sitting. This is to show that Yamada has much longer legs than her friend, and thus has a better figure, which is why Yamada's friend was frustrated.

These are all just Bonus Chapters from the Author by the way, it isn't even all of them, but they ARE canon. Like the one that shows why Ichikawa has a big Gym shirt is how Yamada fit into his in episode 7.

My only complaint about this episode is I recently rewatched because there was one specific bit I wanted to see, and then that turned out to be in another episode entirely.
