If you kill the ghost flame dragons you run past you could have some somber dragon stone

Obviously you should use whatever build pleases you but I would highly recommend giving strength/faith a go. I tried it for the first time in this dlc and couldn't be happier. There are tons of amazing buffing and offensive incantations that have helped significantly. Especially against mobs of tough enemies.
