Like, she does just transform people at will when in non-canon town. It's entirely possible that's a flashback panel in this non-canon context.

Speaking as a lesbian who's into fictional men, sexuality is a confusing thing and there's lots of variants of "likes looking at men, but wouldn't date one" and ways of labeling that. I'm with you on how I'd ship her, though.

I like to think that "non-canon town" is where all the pinups and bonus art happens, so it's totally valid for Rhoda to go around shrinking people there. And it could be where this game's taking place too. Can't speak for anyone else, but a direct comparison of Catalina's and Ashley's current sizes would be neat. (It would also have been amusing to have both the elephant and mouse forms in play at the same time.)
