If you havent seen Shrek, Puss In Boots should be off the table since its a spin-off from the Shrek movies. Honestly hard to pick just 1 though, theres some great choices here.

Gosh, Puss in Boots besides being a great family movie, definitely can still strike me as an adult, such a great story and great animation for the time!
