I second picking episodes with guests that you like to introduce yourself to the show (though there are some people i didn’t know until watching QI who I adore like Holly Walsh and Gyles Brandreth, so don’t be put off by episodes with unfamiliar names if the topic interests you) and will say I prefer Sandi’s seasons over Stephen Fry’s

You can basically do QI episodes in any order. They do very occasionally have callbacks to old episodes, but given there are so many, it's not really expected that the audience remembers everything that ever happened. My advice would be to pick episodes with guests that interest you (the usual UK panel show crowd is on there) or on subjects that sound vaguely interesting.
