Maybe a slightly more medieval/steampunk'y version of a meat processing plant, ala Rupture Farms from Oddworld: Abe's Oddysee. Basically lots of conveyor belts, big saws, a bit of a grungy vibe, etc.

Having a biological ship would be cool nautiloids are cool, but anything even something like Moya from farscape could be cool
