Did anyone mention Shadow of the Vampire, great movie about the making of Nosferatu. And I just read today that Defoe is playing the lead in a new version of Nosferatu, though not sure how accurate that is. You mentioned Dacre Stoker - we had writer Chris McAuley on the Innsmouth Book Club recently. He was telling us about a new project he is launching along with DS called the Stokerverse. It involves comics, RPGS, maybe even film https://www.patreon.com/posts/ep38-chris-63626749
One movie I don't think has been mentioned is 2010's "Daybreakers" with Ethan Hawke and Willem Dafoe. It could be interpreted as a sequel to "I Am Legend", envisioning what would happen if the vampires took over the world. The vampires try to lead a normal modern life, while facing the problem that they're running out of blood and they can't go out in the sun.
