Sorry, late comment. As a Thai Knight, I am more than happy to share links to simple Thai recipes that ya'll can make easily. Pad Thai is like a lower tier in terms of what you can eat, plus there are too many steps to make it. Thai people don't really eat Pad Thai because there are better things to eat. My theory is that it is only popular because it is easy to pronounce. The Thai government promoted it as the Thai national dish to foreigners because each ingredient is supposed to conceptually represent Thailand. It worked since Thai cuisine became famous worldwide. That said, I can't help but roll my eyes when I hear Pad Thai. I do acknowledge that people do like what they like, haha. I wish I could just teleport you guys to Thailand. Crispy rice salad that you guys love, for example, is literally something that we eat, but isn't widely marketed. If ya'll ever go to Thailand I have so many connections. In reality, Pad Gra Pow, Pad See Ew, Pad Kee Mao are more of what regular Thai people eat daily, even then, we have too many things to eat. Plus, it is way easier to make, and in my opinion, tastes better. Pad Thai is what people outside of Thailand eat because they think it is one of the best things you can get. I would even bet you that the politicians who promoted Pad Thai do not eat Pad Thai that often. Sorry for my rant. Too passionate about food. Now I'm hungry.
