I think it could be as simple as officer Elia Kane is still working for Moff Gideon - if he is still alive (?) or somebody higher up with the ex-imperials (???) - and they wanted to make sure the doctor will not be able to give out any information about their cloning experiments (i.e. Grogu, Palpatine, Snoke, who knows?) to the new republic.
