I guess her spirit/force is trapped there so that is why Kanan can still sense her 🤔

Master Luminara is dead. She died during Order 66 - or close to it - not sure (?). The empire is just using her remains to attract and trap surviving Jedi. The sarcophagus where they keep her is the same kind we saw in the Kenobi series when Obi-wan is in the Inquisitor's Fortress trying to rescue Leia.
