Any of the students perspective might be fun. Would be interested to see what a normal student would think of Evan being so far ahead of them. Might be a fun idea if they had a bunch of insane rumors about him that are obviously false like he's a decendant of Merlin or he's Dumbledore's secret love child

I feel like you want someone with additional insight that also fits with the story well. So I don't think Quirrel or Voldemort work at this point in the story. Only at the end. Honestly, someone like Neville or Harley is probably the better idea. They're engaged with active plotlines and could show an interesting perspective of Harry. Rita could also make sense, with her research. Could have a really interesting scene of Harry meeting with her for more details. But I don't think people like Flitwick or the Dursleys work. Maybe previously, or maybe further in the future. They need an active plotline that meshes, that meaningfully pushes things forward, while also showing their internal character and also giving an additional lens on Harry. A lot of adults don't fit that right now. Tonks could also be a good pick.

Maybe Flitwick? Could give us a measure of Harry's prowess and also how much the Head has told some of the staff regarding Quirrel and all. (Remembering that Dumbledore has already alerted some former Phoenix members etc.)
